Stilton Potato Wedges
Serves 4 people
A fun and tasty side dish or snack – and a great way to get kids to try new tastes.
Ingredients:
- 2 x 225g potatoes, scrubbed and washed
- 100 g fresh white breadcrumbs
- 75g Blue Stilton cheese, grated
- 1 egg, beaten
- 50g butter, melted
Instructions:
1 Cut each potato lengthways into 8 equal size wedge shaped pieces.
2 Steam or microwave until just cooked.
3 Mix together the breadcrumbs and grated Stilton.
4 Dip each potato wedge into the beaten egg then into the breadcrumb mixture and place the wedges on their backs in a roasting tray.
5 Cook in the oven for 15-20 minutes until crisp and brown.
Delicious served as a light meal with a tomato salsa dip and green salad or as a side dish.
