
Quick Tips for serving and cooking with blue Stilton Cheese 2 For your cheese board, try serving Stilton with a plum bread or mango chutney. 3 Full bodied or sweet wines complement Stilton's unique taste. Wine and food writer Stephen Barrett recommends the following: Taylor's Tawny Port (10 or 20 year old), Stanton and Killeen Liquer Muscat (Australian), South Australian Shiraz or Chilean oak aged Chardonnay. 2 Beat some Stilton with half its weight of butter, a little milk, a pinch of mace and some sherry to a smooth paste. Press into individual pots, chill well and serve with crudités. 3 Mix some Stilton with a little mayonnaise and a few halved, seeded grapes or some fresh pineapple and use to fill a halved avocado pear. 4 Blend Stilton with a little cider and diced apple. Spread on fingers of toast and grill. 5 Place slices of Stilton on 3 or 4 layers of filo pastry. Fold into neat parcels and in a hot oven for 10-15 minutes. 6 Use Stilton as a delicious filling for baked potatoes. Mix with the mashed potato or crumble on top. Add halved green or black grapes. 7 Melt a little butter and garlic, add some fresh cream and crumbled Stilton. Heat gently without boiling then stir in a little brandy and pour over your favorite pasta; or for speed after cooking your favourite pasta, transfer to a large bowl and add crumbled Stilton. Stir until melted. 8 Use Stilton instead od your usual cheese in any favourite quiche or flan recipe. 9 Top homemade or bought pizza with crumbled Stilton. Or for "Quick Stilton pizza" slice a portion of French loaf in two, spread each cut face with a tomato paste (passata or puree), top with a mixture of finely chopped onions, mushrooms and crumbled. Place under the grill for 5 minutes. 10 Crumble Stilton over any salad dish. 11 Melt a little Stilton over your favourite steak or joint for a few minutes at the end of cooking.
