Stilton in the "cheese stores" aging. Each cheese must be turned
top to bottom every day to keep moisture consistent throughout and prevent sagging.
Young Stiltons are on the shelf and older cheeses in the foreground.
A whole Stilton will weigh in at roughly 8 kilos or about 17 pounds.
Note how the familiar crust has started to form on the older cheeses.
