PROTECTED DESIGNATION OF ORIGIN
Blue Stilton Cheese and White Stilton Cheese were both granted a European
Protected Designation of Origin (PDO) in June 1996. These names are protected
through the European Union and can only be used on cheese that has been
produced in accordance with the terms of the PDO. In simple terms this
logos signifies to the consumer that:
- the cheese (White Stilton or Blue Stilton) has been made by a licensed
dairy located in Derbyshire, Leicestershire or Nottinghamshire
- the cheese has been made to a traditional recipe from locally produced
milk that has been pasteurised before use
- the cheese has been allowed to form its own crust
- the cheese has never been pressed
and in the case of blue Stilton exhibits the classic blue veining.

There are three tiers of protected food name in the EU
- PDO – Protected Designation of Origin
- PGI – Protected Geographical Indication
- TSG – Traditional Speciality Guaranteed
From May 2009, every product that has a protected food name will be required
to show the appropriate logo and/or wording.
