History of Cropwell Bishop Creamery
Cropwell Bishop Creamery is a small independent family run business with
origins dating back to 1847. Based on the border of Nottinghamshire and
Leicestershire - two of the three counties where Stilton may be made -
Cropwell Bishop Creamery has been completely modernized. Easier handling,
improved hygiene and better maturing conditons have been combined with
methods proven by time.
History of Dairy Crest Limited
The Duke of Devonshire established a creamery at Hartington in the 1870s.
The site was eventually bought by Thomas Nuttall, a cheesemaker from Melton
Mowbray, who had already won numerous local prizes for his abilities as
a maker of Stilton. In 1974, the factory was extensively redeveloped on
the original site. Dairy Crest now makes almost 20% of the country's Stilton.

Tuxford & Tebbutt
Tuxford & Tebbutt Creamery, dating back to 1780, is located in Melton
Mowbray, Leicestershire. The name originates from the two original owners,
Mr Tuxford the Stilton man and Mr Tebbutt the pork pie man.
Up until 1965, both cheese and pork pies were made on the same site. However,
since 1966, Tuxford & Tebbutt has focused solely on cheesemaking.
Employing over 80 staff, Tuxford & Tebbutt uses traditional cheese
making skills and is one of only six creameries able to produce Stilton
Cheese.
Colston Bassett Dairy Limited For over 85 years Colston Bassett and District Dairy has been making
the finest quality Blue Stilton, "King of Cheeses". A highly
skilled, dedicated and experienced team use the same time honoured recipe
and methods used by generations to make this unique, award winning cheese,
every day taking the milk from the same pastures and the same farms that
founded the dairy as a co-operative in 1913.

Quenby Hall Blue cheese, thought to be a precursor of Blue Stilton, was produced
at Quenby Hall in the 18th century by the then owner - Shuckburgh Ashby
- and was sold in the village of Stilton. The current owner, Freddie de
Lisle - re-started production of Blue Stilton in 2005 in a purpose built
unit on the estate. It is already gaining a strong following.
